Ingredients

  • 500 g minced beef
  • 1 yellow onion
  • 2 garlic cloves
  • 1 small can of corn
  • 1 pkg mixed beans
  • 1 can (500 g) crushed tomatoes
  • 1 red chili
  • ½ red bell pepper
  • ½ green bell pepper
  • Oil for frying
  • 2 tbsp tomato paste
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt
  • Black pepper
  • Water
  • Creme fraiche for serving

Instructions

  1. Dice the onion and mince the chili. Core the bell peppers and cut them into small pieces.
  2. In a cast iron balti dish or Dutch oven over medium heat, brown the ground beef, add the onion, chili, bell pepper, and let it cook for a few minutes.
  3. Add tomato paste and cook for a minute more. Stir in the remaining ingredients and let it simmer for a few minutes. Add water for a thinner soup. Taste with salt and pepper.
  4. Serve topped with creme fraiche and for example garlic and herbs bread.
