Nettle Pesto

Ingredients
- 2 cups fresh nettle leaves
- 4 cloves of garlic
- 3/4 cup grated parmesan cheese
- 3/4 cup olive oil
- 2 tbsp pine nuts
Equipment
- Mortar and pestle or food processor
- Medium size enameled cast iron Dutch oven
Instructions
- In a pot or Dutch oven over high heat, blanch the nettle leves for a minute.
- Remove as much water as possible from the leaves by straining trough a sieve.
- Blend all ingredients until smooth with a mortar and pestle or in a food processor.
- Spread on a slice of bread or serve with for example pasta.
