Golden Harvest Rhubarb-Apple Crumble Pie

500 g rhubarb

500 g chopped apples

250 g butter

2 dl sugar

5 dl rolled oats

2 dl coconut flakes

2.5 dl flour

4 tsp baking powder

2 eggs (optional)
- vanilla sauce for accompaniment

Peel the rhubarb if needed, and slice it into roughly 1 cm pieces.

Chop the apples.

Arrange the rhubarb and chopped apples together in the baking pan with a 2.75-quart/2.6-liter capacity.

Melt the butter, then mix in the sugar.

Combine all the dry ingredients (rolled oats, coconut flakes, flour, baking powder).

Stir the dry ingredients into the butter + sugar mixture. If using eggs, add the egg(s) last and mix in.

Spread the batter mixture over the rhubarb + apple layer, forming a “lid.”

Bake at 200 °C (392 °F) for about 30 minutes, or until the top is golden brown.
