Golden Harvest Rhubarb-Apple Crumble Pie

Sweet meets tart in this Golden Harvest Rhubarb-Apple Crumble Pie. Juicy apples balance the bold tang of rhubarb, all tucked beneath a buttery oat-coconut crust that bakes to a golden crisp. It’s a rustic, comforting dessert that celebrates the best of orchard and garden—perfect with a scoop of ice cream or a drizzle of vanilla sauce.

Ingredients

• 500 g rhubarb

• 500 g chopped apples

• 250 g butter

• 2 dl sugar

• 5 dl rolled oats

• 2 dl coconut flakes

• 2.5 dl flour

• 4 tsp baking powder

• 2 eggs (optional)

• vanilla sauce for accompaniment

Equipment

• Enameled Cast Iron Oven-safe baking dish, Roasting Pan (about 2.75 quarts/2.6 liters capacity)

Method

1. Peel the rhubarb if needed, and slice it into roughly 1 cm pieces.

2. Chop the apples.

3. Arrange the rhubarb and chopped apples together in the baking pan with a 2.75-quart/2.6-liter capacity.

4. Melt the butter, then mix in the sugar.

5. Combine all the dry ingredients (rolled oats, coconut flakes, flour, baking powder).

6. Stir the dry ingredients into the butter + sugar mixture. If using eggs, add the egg(s) last and mix in.

7. Spread the batter mixture over the rhubarb + apple layer, forming a “lid.”

8. Bake at 200 °C (392 °F) for about 30 minutes, or until the top is golden brown.

9. Serve warm with vanilla sauce or ice cream (if desired).
