Puerto Rican Sofrito

Ingredients
- 3 large green bell peppers
- 3 large onions
- 1 head of garlic
- 2 bags of aji dulce (about 10 peppers) or 1 red bell pepper
- 1 large bunch of cilantro
- 15 leaves of recao
Instructions
- Remove the stem and seeds from the bell peppers and aji dulce, peal, and cut the onions into quarters.
- Mix all the ingredients in a food processor until finely minced.
- Store in an airtight container in the refrigerator for a few weeks or freeze in small portions.
