Golden Zest: Roasted Baby Potatoes with Lemon & Thyme

These crispy roasted potatoes, affectionately known as Sun-Kissed Golden Thyme Potatoes, are bursting with flavor from fresh thyme and bright lemon zest – the perfect side for any hearty dish.

800 g baby or delicacy potatoes (scrubbed)

Oil and salt for roasting

Leaves from 2-3 fresh thyme sprig

Zest of 1 lemon (washed)

Preheat oven to 200 °C.

Cut potatoes in half (if large), toss in a baking dish with oil and salt. Roast for about 30 minutes until cooked through and golden.

Once done, toss with fresh thyme leaves, lemon zest, and a little oil. Serve hot.
