  1. Cook the pasta according to the instructions on the box and save 1 cup of pasta water.
  2. In a cast iron balti dish or skillet over medium heat, add bacon cut into 1 cm pieces. Cook until golden.
  3. Remove the bacon and any access fat, deglaze with a little pasta water.
  4. Add the buffalo chicken cheese mixture to the pan and add pasta water until desired thickness. Stir in the bacon (save some for serving) and pasta.
  5. Serve topped with grated parmesan and bacon.
