Apple and Ginger Sorbet
Ingredients
- 4 large apples
- 1/4 cup sugar
- 1 tbsp lemon juice
- 1/2 tbsp fresh ginger, grated
- 1/2 tsp vanilla extract (optional)
- Pinch of salt

Prepare the Apples:
- Peel, core, and chop the apples into small pieces.
Cook the Apples:
- In a medium size enameled cast iron Dutch oven, combine the chopped apples, water, ginger and sugar.
- Cook over medium heat, stirring occasionally, until the apples are soft (about 10-15 minutes).
Blend the Mixture:
- Once the apples are soft, remove the Dutch oven from the heat.
- Add the lemon juice and vanilla extract.
- Use an immersion blender or transfer the mixture to a blender, and puree until smooth.
Strain the Puree (Optional):
- For an extra smooth texture, strain the puree through a fine-mesh sieve.
Chill the Mixture:
- Allow the puree to cool to room temperature.
Freeze the Sorbet:
- If you have an ice cream machine (not necessary), pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until the sorbet reaches a soft-serve consistency.
- Transfer the sorbet to an airtight container and freeze for at least 2 hours to firm up before serving.
Serve:
- Let the sorbet thaw in room temperature for a few minutes then pulse it in a blender to aerate, break up ice crystals, and create the desired consistency.
- Scoop the sorbet into bowls or cones, top with lemon zest, shaved chocolate (optional) and enjoy!
Variations with Seasonings

- Add 1 teaspoon of ground cinnamon to the apple mixture while cooking for a warm, spicy flavor.
