  • 300 g flour, 00 (for more chewy dough), Durum wheat flour, or all-purpose flour.
  • 2 tsp Kosher salt (or 1 tsp table salt) 5.7g
  • 2 large eggs
  • 3 large yolks

*Weigh the eggs and yolks then add enough water to get to 185 grams total


  1. Mix flour and salt in the food processor for 10 sec.
  2. Add the wet ingredients and process until dough forms.
  3. Knead by hand for 12 minutes.
  4. Flour the dough and wrap in plastic, then let the dough rest 30 minutes to 5 hours at room temperature.
