Homemade Enchilada Sauce

Yield 2 cups
Ingredients
- 3 tbsp olive oil
- 3 tbsp all-purpose flour
- 1 tbsp ground chili powder
- 1 tsp ground cumin
- ¼ tsp dried oregano
- ½ tsp garlic powder
- ¼ tsp salt
- Pinch of cinnamon (optional)
- 2 cups vegetable broth
- 2 tbsp tomato paste
- 1 tsp apple cider vinegar or white wine vinegar
- Freshly ground black pepper

- In a medium-sized pot over medium heat, add the oil, when the oil is hot, add the flour and the spices. Let it cook while stirring for a minute. Whisk in the tomato paste and pour in the broth while whisking to avoid any lumps.
- Bring to a simmer and cook for about 5 minutes, until the sauce has thickened a bit.
- Remove from the heat and stir in the vinegar and season with salt and pepper.
