Red Wine Whiskey Sauce

Ingredients

  • 1 dl red wine
  • 0.5 dl whiskey
  • 1 shallot, finely chopped
  • 1 tbsp Dijon mustard
  • 2 dl veal stock (not concentrated)
  • 2.5 dl cream
  • sherry vinegar, a few drops
  • salt

  • In a medium size Dutch oven over medium-low heat, cook the onion for a few minutes until golden. 
  • Add Dijon, red wine, whiskey, and veal stock, and let it cook for a few minutes.
  • Taste with vinegar and salt.
