Zutziki
Cool, creamy, and full of fresh flavor, zutziki is a delightful twist on the classic Greek tzatziki. Instead of cucumber, this version uses sautéed zucchini, giving the dip a slightly sweeter, softer character while still keeping the refreshing tang of yogurt, garlic, and dill. Perfect as a dip with warm pita, a side for grilled meats, or a fresh spread on sandwiches, this simple recipe brings a touch of Mediterranean sunshine to your table.
Ingredients
- 2 garlic cloves, pressed (add more for stronger garlic flavour)
- 1,5 tsp white wine vinegar
- 300 g zucchini, grated
- 280 g Greek yoghurt
- 2 tbsp fresh dill, chopped
- 2 tbsp olive oil
- salt

Instructions
- Place the zucchini in a kitchen towel and squeeze out a bit of the excess water.
- Saute the zucchini for a few minutes in olive oil over medium heat in a frying pan,
until softened. Season with salt. - In a bowl, mix yoghurt, garlic, vinegar, olive oil, dill and taste with salt.
- Fold in the cucumber and taste again with salt.
- Cover and let it rest for an hour in the fridge.
