Rustic High-Protein Apple Cottage Cake

This apple cake with cottage cheese is a simple, rustic dessert that combines a tender buttery crust with a creamy, lightly sweet filling. The cottage cheese gives the cake a soft texture and a subtle tang, which pairs beautifully with the sliced apples and warm cinnamon on top. It’s an easy bake that works well for both everyday coffee breaks and casual gatherings, especially when served slightly warm with vanilla sauce.
Ingredients
Dough:
- 100 g butter (room temperature or gently softened in the microwave)
- ¾ dl sugar
- 1 egg
- 3 dl all-purpose flour
Filling:
- 500 g cottage cheese
- 2 eggs
- 1 dl granulated sugar
- 1 tsp vanilla sugar
- 3 peeled apples

Stir together the sugar and butter until light and fluffy. Add the egg and flour. Press the dough into a 10-inch / 25 cm cast iron pan. Make the edge about 5 cm / 2 inches high.

Mix the cottage cheese and eggs, then add the vanilla sugar and granulated sugar.
- Pour the filling into the crust. Peel and core the apples, cut in half, and slice them into 3-4 mm slices/wedges. Gently press the apple slices into the filling. Finish by sprinkling cinnamon on top.
- Bake in the oven at 200°C (392°F) for 1 hour.
- Serve with, for example, vanilla sauce.
