Chili Cucumber

Quick-pickled cucumber with a taste of chili and green onions is a fresh and hot accessory that goes well in salads, or with rice dishes.

Ingredients

  • 2 tsp rice vinegar
  • 2 tsp sugar
  • 1 tsp salt
  • 1 cucumber(à ca 300 g)
  • 1 thinly sliced scallion
  • 1/2 thinly sliced red chili

Directions

  1. Mix rice vinegar, sugar, and salt.
  2. Slice the cucumber into thin slices, use a mandoline if you have one. Mix with the vinegar mixture, the scallion, and the chili.
  3. Let rest for 15 minutes and pure out superfluous liquid before serving.
