Creamy Lemon Pasta

Ingredients

  • 25 g of butter
  • 1 grated garlic clove
  • 2 dl cream
  • 2 tablespoons finely grated lemon peel (+ extra for serving)
  • 1 tablespoon freshly squeezed lemon juice
  • 400 g pasta (preferably linguine)
  • 1 dl grated parmesan
  • salt
  • black pepper

Instructions

  1. Cook pasta according to the instructions on the box and save 1 dl of pasta water.
  2. Brown the butter in a cast iron frying pan over medium heat. Add the garlic and fry for a minute. Pour in the cream, lemon zest and juice and bring to a simmer. Taste with salt.
  3. Add the pasta, pasta water and half of the parmesan into the sauce and stir to a creamy pasta.
  4. Serve topped with the rest of the Parmesan, freshly cracked pepper and extra lemon zest.
