Creamy Basil Pesto Tuna Bacon Pasta

Ingredients
- 180g Basil Pesto
- 1 can (200g) of tuna in water, strained
- bacon, cut into 1 cm slices
- 1 - 2 sundried tomatoes, chopped

- Cook the pasta according to the instructions on the box.
- In a cast iron skillet over medium heat, cook the bacon until golden, and then remove the bacon to a plate.
- In a pot over medium heat, add the pesto, stir in the tuna, sundried tomatoes, and bacon (save a little for topping), and bring to a simmer stirring sporadically making sure the sauce is well combined.
- Stir in the pasta and make sure all pasta are coated with the sauce, adjusting the thickness with pasta water until the desired consistency.
- Serve topped with additional bacon and grated parmesan.
