Spinach, Onion and Feta Cheese Pie

Ingredients

  • Pie dough/crust
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • 400 grams frowzen tawed spinach
  • 2 tbsp olive oil
  • 3 eggs
  • 3 dl milk
  • 150 grams of feta cheese
  • 1 tsp salt
  • 2 ml black pepper

Instructions

  1. Prepare the pie crust.
  2. Over medium heat in a cast iron skillet, cook the onion for a few minutes then add the garlic and cook for a minute more. Stir in the spinach and cook until all water has evaporated. 
  3. In a bowl stir together, the eggs, milk, salt and pepper.
  4. Spread the spinach on top of the pie crust and crumble the feta cheese on top of the spinach.
  5. Poor the egg mixture over the pie ingredients and back in the oven at 400F°/200°C for about 25 minutes.
