Puerto Rican Sofrito recipe

About 5 cups


  • 3 large green bell peppers
  • 3 large onions
  • 1 head of garlic
  • 2 bags of aji dulce (about 10 peppers) or 1 red bell pepper
  • 1 large bunch of cilantro
  • 15 leaves of recao


  1. Remove the stem and seeds from the bell peppers and aji dulce, peal, and cut the onions into quarters.
  2. Mix all the ingredients in a food processor until finely minced.
  3. Store in an airtight container in the refrigerator for a few weeks or freeze in small portions.
