Rhubarb Pie with Oat and Coconut Crust Recipe

Very easy to make and takes only about 30 - 40 minutes to make including baking time.


  • 500 grams Rhubarb
  • 125 grams Butter
  • 2 dl sugar
  • 2.5 dl Rolled Oats
  • 1 dl Coconut Flakes
  • 1.25 dl Flour
  • 2 tsp Baking Powder
  • 1 Egg (optional)



  1. Peel the rhubarb if needed and cut into about 1 cm pieces and add to a 10.25" cast iron skillet or other oven-safe form.
  2. Combine melted butter and sugar.
  3. Combine all dry ingredients.
  4. Mix the dry and wet ingredients. If included, add the egg last. 
  5. Spread the batter on top of the rhubarb as a lid and bake at 200°C (392°F) for about 25-30 minutes until the top is golden brown.

Serve with vanilla sauce or ice cream.
