500 g ground beef

4 egg yolks

80 g pickled beets (coarsely grated)

30 g capers (roughly chopped or mashed)

½ shallot (finely chopped)

1½ Tbsp Dijon mustard

Butter (for frying)

Salt and freshly ground black pepper

4 eggs (for frying, one per patty)

In a bowl, combine beef with egg yolks, beets, capers, shallot, Dijon mustard, salt, and pepper—mix quickly and lightly.

Shape into 4 patties.

Melt butter in a skillet and fry the patties a few minutes on each side until fully cooked.

In the same pan, fry the 4 eggs sunny-side up to your liking.
