Red Wine, Coffee & Black Pepper Beef Sauce Recipe

A rich, savory sauce with layers of red wine, black pepper and roasted coffee, balanced with cream and a touch of Worcestershire sauce. It pairs particularly well with entrecôte, ribeye, sirloin and other richly flavored cuts of beef.

Ingredients

  • 200 ml beef stock or 200 ml water + ½ beef bouillon cube (start with this amount)
  • 100 ml heavy cream
  • 1–2 tsp freshly coarsely crushed black pepper
  • 1 tsp finely ground coffee
  • 1 small shallot, finely chopped
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp honey or brown sugar
  • 1 tbsp butter
  • Salt, only if needed

Method:

  1. Melt the butter in the pan and gently sauté the shallot until softened.
  2. Add the crushed black pepper and cook for about 30 seconds.
  3. Add 200 ml water and ½ bouillon cube. Stir until dissolved.
  4. Simmer until reduced to roughly 100 ml.
  5. Add the cream, Dijon, Worcestershire and honey.
  6. Stir in 1 tsp coffee.
  7. Simmer gently until the sauce thickens enough to coat a spoon.
  8. Taste. Add another ½–1 tsp coffee if you want a more pronounced roasted flavor.

Best pairings

🥩 Entrecôte / ribeye — my first choice
The fat in entrecôte works particularly well with the bitterness of coffee and the heat of black pepper. I'd serve the steak medium-rare and use the sauce sparingly alongside it.

🥩 Beef tenderloin / filet mignon
A leaner cut benefits from the richness of the sauce. The coffee gives the dish a deeper, roasted character without needing a very heavy sauce.

🥩 Sirloin / strip steak
The pepper and coffee complement the beef's stronger flavor nicely.

🥩 Roast beef
Especially good if the sauce is made with beef stock and finished with cream.

Suggestions of what to serve alongside

I'd keep the sides relatively simple so the sauce remains the interesting element:

  • Crispy roasted potatoes or pommes Anna
  • Creamy mashed potatoes
  • Rösti — particularly good because the crisp potato contrasts with the creamy sauce
  • Roasted root vegetables
  • Green beans or broccolini
  • Roasted mushrooms
