Red Wine Whiskey Sauce

Ingredients
- 1 dl red wine
- 0.5 dl whiskey
- 1 shallot, finely chopped
- 1 tbsp Dijon mustard
- 2 dl veal stock (not concentrated)
- 2.5 dl cream
- sherry vinegar, a few drops
- salt

- In a medium size Dutch oven over medium-low heat, cook the onion for a few minutes until golden.
- Add Dijon, red wine, whiskey, and veal stock, and let it cook for a few minutes.
- Taste with vinegar and salt.
