Christmas Ham Schnitzel with Pickled Cucumber and Chili Mayonnaise

Ingredients
Pickled cucumber
- 1 Small cucumber
- 2 tbsp white wine vinegar
- 1 tbsp sugar
- 1/2 tsp salt
Chili mayonnaise
- 1 dl mayonnaise
- 1 tbsp sriracha sauce
Schnitzel
- 4 slices of Christmas ham or other ham
- 2 beaten eggs
- 2 dl panko or bread crumbs
- 1 tbsp canola oil
- 1 tbsp butter
2 - 4 portions of rice
For serving (optional)
- Roasted sesame seeds
- Fresh coriander

Instructions
- Slice thin slices of cucumber.
- Mix the vinegar, sugar, and salt and soak the cucumber in the mixture.
- Boil the rice.
- Mix the mayonnaise and sriracha.
- Turn the ham first in flour, then in the beaten eggs, and lastly in panko. Fry in canola oil and butter until the schnitzel is golden and crispy.
- Serve the schnitzels with chili mayonnaise, cucumber, and rice. Top with sesame seeds and coriander.
