Quick-pickled cucumber with a taste of chili and green onions is a fresh and hot accessory that goes well in salads, or with rice dishes.
- 2 tsp rice vinegar
- 2 tsp sugar
- 1 tsp salt
- 1 cucumber(à ca 300 g)
- 1 thinly sliced scallion
- 1/2 thinly sliced red chili
- Mix rice vinegar, sugar, and salt.
- Slice the cucumber into thin slices, use a mandoline if you have one. Mix with the vinegar mixture, the scallion, and the chili.
- Let rest for 15 minutes and pure out superfluous liquid before serving.
