  • 350 grams of flour
  • 2 dl of hot water
  • 2 tbsp olive oil
  • 1 pinch of salt

  1. In a bowl, combine flour, water, salt, and oil, and stir until combined. Knead the dough until smooth, about 7-10 minutes.
  2. Let the dough rest in the bowl under a towel for 20 minutes.
  3. Preheat a cast iron skillet over medium-low heat for about 5-7 minutes.
  4. Knead the dough again for a minute and then cut it into 8 equally sized pieces.
  5. Roll the pieces flat with a rolling pin on a gently floured surface.
  6. Turn the heat up to medium - medium-high for 30 seconds, the skillet should be hot, but not too hot so that the bread will burn.
  7. Place the dough in the skillet and brown for about 30 seconds until one large or a few small bubbles start to form. Then increase the heat slightly and flip the bread over for about 20 seconds, the bread should start to puff up almost immediately, then flip the bread again and lower the heat to medium for about 15 seconds.
  8. Remove the bread to a plate and set aside. Repeat with the rest of the dough.
  9. When serving, cut the bread open with a knife and fill it with the ingredients of your choice.
