Cinnamon Roll Bread with a Cast Iron Bread Pan

Cinnamon Roll bread recipe

Servings: 1 loaf

The Dough

  • 1/2 package dry yeast or 25g fresh yeast
  • 50 g butter, melted
  • 1.3 cups / 3 dl milk
  • 50 ml / 1/4 cup / 1/2 dl of sugar
  • 1 ml of salt
  • 480 g / 3.4 cups / 8 dl all-purpose flour

The filling

  • 50 g butter
  • 1/4 cup / 1/2 dl brown sugar
  • 2 tsp cinnamon

Instructions

  1. For the dough, mix the melted butter and the milk and heat to about body temperature 37°C/98°F.
  2. Add the yeast and let it rest for a few minutes.
  3. In a large bowl, add the liquid, flour, sugar, and salt,. Mix with a kitchen machine (until nothing sticks to the side of the bowl) or by hand.
  4. Let the dough rest for 40 minutes under a kitchen towel until it has doubled in size.
  5. Use a rolling pin and flatten the dough to a rectangle form of about the size of the bread pan.
  6. Worm and soften the butter in a microwave oven and spread it evenly on top of the dough.
  7. Mix the brown sugar and cinnamon and spread evenly on top of the butter.
  8. Roll the dough into a cylinder cut the roll in the middle lengthwise, starting 1  cm from the top and all the way down. Turn each side to get the cinnamon side up. Cross them at the centre and braid 1 or more times.
  9. Place the bread into the Cast Iron Bread Pan and cover with the lid. Any spare pieces can be put in an extra skillet or another form.
  10. Let the bread rest for about 20 - 40 minutes.
  11. Preheat the oven to 400°F (200°C)
  12. Beat the egg and brush the egg on top of the bread and spread pearl sugar on top (optional, if you want less sugar you can skip this step and instead brush the bread with melted butter after baking).
  13. Bake the bread in the oven for about 15 minutes with the lid on and then remove the lid and bake for another 10 minutes.
  14. Spread icing on top of the bread (optional). For a healthier alternative brush with melted butter.
  15. Serve with coffee or a beverage of your choice.
