Christmas Ham Schnitzel with Pickled Cucumber and Chili Mayonnaise

Christmas ham schnitzel

2 - 4 servings


Pickled cucumber

  • 1 Small cucumber
  • 2 tbsp white wine vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt

Chili mayonnaise

  • 1 dl mayonnaise
  • 1 tbsp sriracha sauce


  • 4 slices of Christmas ham or other ham
  • 2 beaten eggs
  • 2 dl panko or bread crumbs
  • 1 tbsp canola oil
  • 1 tbsp butter

2 - 4 portions of rice

For serving (optional)

  • Roasted sesame seeds
  • Fresh coriander


  1. Slice thin slices of cucumber.
  2. Mix the vinegar, sugar, and salt and soak the cucumber in the mixture.
  3. Boil the rice.
  4. Mix the mayonnaise and sriracha.
  5. Turn the ham first in flour, then in the beaten eggs, and lastly in panko. Fry in canola oil and butter until the schnitzel is golden and crispy.
  6. Serve the schnitzels with chili mayonnaise, cucumber, and rice. Top with sesame seeds and coriander.
