Fish Gratin with Salmon, Cod, Shrimps and White Wine Sauce

Ingredients

  • 300 g salmon, 2×2 cm cubes
  • 300 g cod, 2×2 cm cubes
  • 100 g peeled shrimps

Mashed potatoes

  • 1 kg potatoes
  • 1,5 dl milk
  • 3 tbsp butter
  • 1 yolk
  • salt and pepper

The sauce

  • 2 dl cream
  • 1 dl milk
  • 1,5 dl white wine
  • 2 tbsp flour
  • 2 tbsp shellfish fond, lobster fond, or 1 fish stock cube
  • 2 ml cayenne pepper
  • 0,5 tsp raw sugar
  • 1 tbsp butter
  • salt and pepper

Instructions

1. Peel the potatoes and, cut large potatoes in half, and boil until soft. Strain in the potatoes a colander and let them steam off.

2. Mix with an electric hand mixer or potato masher, add milk, butter, and yolk, taste with salt and pepper.


The Sauce

3. Boil the wine in a post until reduced by 50%. Stir in the cream, milk, and flour.
Add fond, sugar, and cayenne pepper. Let it boil for about 5 minutes. Add the butter and taste with sale and pepper.

The Gratin

4. Preheat the oven to 225°C/440°F.

5. Add the mashed potatoes around (against the border with room for fish and sauce in the middle) an oven-safe form.

6. Bake the mashed potatoes for about 5 minutes at the top rack in the oven until golden brown at the top.

7. Lower the oven temperature to 175°C/350°C.

8. Season the fish with salt and pepper and add the fish in the middle of the form. Pour the sauce on top of the fish.

9. Bake in the oven for 20 minutes at 175°C/350°C.

10. Top the gratin with shrimps and dill.

Serve with peas or your favorite vegetables.
